Rediscovering Cinnamon

One of the things that I struggle with in terms of my diet and diabetes is sweeteners. Now, I *love* sugar, but can't really have any. Haven't had any real sugar in years, and stopped taking sugar in tea when I was small although I still need sugar in coffee. So, of course, I use Equal as my substitute of choice. However, I really have problems with hot cocoa. I love the stuff, but it takes a lot of Equal, almost three packets, to make it sweet enough for me. That's way too much, of course, and since I was diagnosed with diabetes, I've managed to drink my cocoa with 1 Equal serving. Guess what? Pretty bitter. To my taste buds, anyway.

Well, guess what? I've re-discovered cinnamon. Yes, cinnamon. There are studies showing that it helps lower blood glucose in your body. While this is a really good thing, I've been reading a lot of studies on the matter, and its hard to find a definite answer on the subject. That's one of the joys of the internet - it's easy to find information on a subject, and it's equally easy to find information that refutes the original information that one found. But you know what? I don't care! I've always put cinnamon in with the pancake mixes I use, and now I'm rediscovering the use of cinnamon in other stuff - hot cereal (yeah, I know, I should have been using this one for years!), on a piece of apple, mixed in with some cottage cheese, and yes, in my cocoa.

I really like the taste, but more importantly, I've noticed that my blood sugar levels go down after ingesting the stuff. I have no idea if this is due to the cinnamon, but what the heck. Might as well keep this up. And like I said, I like the taste.
